Typical Macedonian tavče gravče

 
 

Tavče Gravče (Macedonian: Тавче гравче; English translation: beans in a skillet) is traditional Macedonian dish. It is prepared with fresh beans and it can be found in almost all restaurants in Macedonia and all over the Macedonian diaspora. It is served in traditional Macedonian earthenware.

Below are the ingredients for preparing the dish, but every cuisine uses other ingredients, too, and has its own method of preparation.

  • beans
  • onion
  • oil
  • red dry pepper
  • red and black pepper, salt and parsley

The beans are cleaned and then soaked in cold water for 3 hours to become soft. After that they are boiled in a pot. After first boiling the water is thrown out and replaced with fresh water. Then add the onion and the black pepper.

In a separate  pan fry the onion together with the black pepper. When the beans are boiled put themin earthenware together with the onion and the red pepper and stir well. After that, put a lid on the earthenware and put the dish in oven to be cooked on 220 °C. During the baking you should be careful, as the beans should not become dry.

The earthenware does not just give a traditional look to the meal, but also keeps the beans warm.

The beans can be eaten with different kinds of meat.

 

Recipe Ingredients

  • 500 gr. beans
  • 250 gr. onion
  • 1 clove garlic
  • 50 gr. oil, solt
  • 1 tablespoon flour
  • 1 tablespoon red peper
  • dry mint and parsley

Recipe Cooking and Preparation Method

 

Before you begin, wash and soak the beans in water, then put themto boil. You need to be careful not to overboil the beans because the beans must remain whole. The surplus of water is poured out but not completely.

Chop the onion finely and fry itwith a bit of oil. When the onions are fried add the required red peper, stirit andadd it to the beans. Add black pepper and garlic to taste.

The prepared beansare then transferred into a terracotta pan, sprinkle with pestled red papper, chopped parsley and dry mint. Sprinkle it with a bit of oil.

In summer time you can add round pieces of tomato and fresh paprika, and in winter you can add dry paprika. After this preparation the beans are put inside anoven to bake, but you have to be careful to leave it juicy.
