Fine dice onion and garlic:

Cut the aubergine into small cubes:

Remove seeds from red peppers and
tomatoes.
Cut them:

Heat olive oil in the frying
pan. Fry the onion and garlic till golden, about 2-3 min: |

Add the aubergine and fry till soft, about 3 min. Add
sliced peppers and fry them, about 2-3 min. Add sliced tomatoes to the frying pan and fry
them about 2-3 min. Add salt and spices to taste, add chopped fresh
coriander. Mix well and remove from heat:
