Couscous with Tomatoes & Onion

 
Couscous    250 g
Onion 1
Tomatoes 2
Butter or olive oil 30 g
Dry herbs 1 tbsp
Stock 250 ml
Salt to taste

Melt the butter in a frying pan

and fry the chopped onion till soft:

Chop the tomatoes and add to the onion, then add dry herbs and fry for 3 min.:

Add the stock and bring it to the boil. Place couscous in a steam dish and add the stock to couscous. Mix and put in the steamer for 5-6 min:

This dish is delicious on its own or may be served as an excellent garnish to accompany meat dishes:
