Spinach Soup

 
Water or vegetable stock 500 ml
Spinach 500 g
Onion 1
Butter 100 g
Vinegar to taste
Salt, ground pepper to taste

Cooking time: 15 min.

Peel the onion and dice it finely.

Melt the butter in a saucepan and fry the onion for about 3 min.:

Wash the spinach leaves well, add them to the saucepan and cook gently for 5 min. until the leaves are soft. Then add hot water, season with vinegar, salt, and black ground pepper, bring to a boil and cook for further 5 min.:

Spoon the soup into a food processor and process to a fine purée.

Serve the soup garnished with some cream, sour cream or a hard-boiled egg:
