Dough for Pelmeni and Vareniki

 
Flour

3 cups

Egg 1
Water 2/3 cup
Salt 1 tsp

To make the dough, whisk the egg in a pan with salt and add water:

Sift the flour into a bowl, add whisked egg and mix:

Mix into a firm paste and let stand for 1 hour:

For speedier work, the dough may be cut into 2 - 2.5 inch squares. Each square is then rolled out into a thin circle:

Alternatively, roll out the dough quite thin on a floured board. Cut rounds with a large biscuit cutter or with the rim of a glass:

You can now proceed to making either pelmeni or vareniki.
