Wash potatoes, then peel and wash
again, if it's too big cut into even pieces (not too small or they will
go watery):
Put in a pan with a little
salt and pour over boiling water to cover. Return to the
boiling, cover and boil gently for 15 - 20 minutes (new potatoes
30 - 40 minutes):
Drain as soon as they are
cooked. When ready, the potato should feel tender when tested
with a skewer or the tip of a sharp knife
