Sauce Ingredients:

Cut each filet in half. Prepare a dip by
mixing the flour with salt. Dip each piece of filet in the
flour.
Heat the vegetable oil in a
frying pan, add the fish and fry on medium heat about 3-4 minutes on
each side:
While the fish is frying,
make the sauce (it takes about 1-2 minutes to make):

Whisk the egg yolk with
a pinch of salt;

Add the olive oil, a few
drops at a time, continuing to beat vigorously all the while
until the liquid seems to thicken and lighten a bit
and looks like an emulsion;

Add lemon juice and
chopped dill and mix together.
When the fish is cooked,
place it on a plate and pour the sauce over the fish. Serve with potato chips
and salad:
