Pear in Red Wine Sauce

 
Pear:
 
 
 

Sauce:

Pears    4 eh
Water 400 g
Sugar 400 g
 
Sugar 70 g
Red wine 400 g
Lemon 1/5
Star Anise 1 eh
 

Peel the pears. To prepare the syrup, bring water to a boil, add the sugar, and stir. Bring the syrup to a boil and cook for 5 min. Put the pears in the syrup and cook for further 5 min. After that remove from heat to cool down:

To make the sauce, take a small saucepan, pour the wine into it, add the lemon and star anise. Cook till the sauce is reduced to 1/3 of the original volume. Add the sugar and cook for 2-3 min. over gentle heat or until the sauce is slightly reduced and thickened. Remove the lemon and star anise from the sauce:

Pour the hot sauce on a hot plate, put the pear in the middle and serve:
