Pear in Red Wine Sauce

Pears 4 eh
Water 400 g
Sugar 400 g
Sugar 70 g
Red wine 400 g
Lemon 1/5
Star Anise 1 eh


  • Peel the pears;

  • To prepare the syrup:

    • bring water to a boil, add the sugar, and stir. Bring the syrup to a boil and cook for 5 min;

  • Put the pears in the syrup and cook for further 5 min. After that remove from heat to cool down:

  • To make the sauce:

    • take a small saucepan, pour the wine into it, add the lemon and star anise

    • Cook till the sauce is reduced to 1/3 of the original volume;

    • Add the sugar and cook for 2-3 min. over gentle heat or until the sauce is slightly reduced and thickened;

    • Remove the lemon and star anise from the sauce:

  • Pour the hot sauce on a hot plate;

  • put the pear in the middle and serve:
