Red pepper 2
Tomatoes 4
Onion 1
Garlic 2 cloves
Coriander 50 g
Olive oil 50 g
Salt, pepper, ground coriander to taste


  • Fine dice onion and garlic

  • Cut the aubergine into small cubes

  • Remove seeds from red peppers and tomatoes. Cut them;

  • Heat olive oil in the frying pan. Fry the onion and garlic till golden, about 2-3 min:

  • Add the aubergine and fry till soft, about 3 min.

  • Add sliced peppers and fry them, about 2-3 min;

  • Add sliced tomatoes to the frying pan and fry them about 2-3 min;

  • Add salt and spices to taste, add chopped fresh coriander;

  • Mix well and remove from heat:

  • You can serve this dish as a starter on a piece of white bread with butter or use it as a hot or cold garnish:
